- Chicory is also used as a forage plant for animals. This review highlights the bioactive composition of C. intybus L. and summarizes the antioxidant activity associated with the presence of inulin, caffeic acid derivatives, ferrulic acid, caftaric acid, chicoric acid, chlorogenic and isochlorogenic acids, dicaffeoyl tartaric acid, sugars, proteins, hydroxycoumarins, flavonoids and sesquiterpene lactones.
